As we hunker down in the midst of winter, I thought I would share one of my favorite recipes for pancakes. These are easy to make with very little prep time and perfect for a post-workout breakfast.  They also make for tasty mid-day snacks.


  • 1 egg
  • 1 banana
  • 1/2 cup protein powder (I prefer a flavor like cinnamon bun or vanilla)
  • 2-3 TBSP of ground flax seed
  • 1 tsp ginger powder
  • Dash or two of cinnamon


Mash the banana in a small bowl and mix in the egg.  Add dry ingredients and mix together for the batter.  Feel free to add walnuts or a small amount of rolled oats to give it some texture.  Cook on medium heat with coconut oil.  Top with butter and honey/maple syrup or choice of sweetener.  Makes three small pancakes.  Enjoy!
